IMG_8354cwffarm were lip smakin goodWe are at the Make Gahanna Yours Farmers Market today, Sunday August 18th from 4-7 pm at 75 W. Johnstown Rd., Gahanna, Ohio 43230. We will have our farm fresh vegetables of red & green tomatoes, Asian & baby eggplant, Patty Pan squash, potatoes, beets, garlic, red, white & sweet onions, sweet & hot peppers, bell peppers, cucumbers, sweet potatoes, broccoli, Brussel sprouts, cauliflower, carrots, cabbage, green & yellow zucchini, yellow squash, our featured patty pan squash along with our CSA eggs & meat and our delicious pantry-fare, jams & jellies, honey & maple syrup.

This week we are featuring our delicious patty pan squash which is high in beta carotene the anti cancer oxident.  Patty pans are sweet like a sweet potato but with white meat it can be used a number of ways and here is a recipe along with several ways to prepare and use patty pan squash.

Carousel Watergardens Farm Stuffed Patty pan Squash

Recipe makes 2 servings

2 patty pan squash, stem and blossom removedstuffed patty pan squash

2-3 slices bacon or turkey, chicken or pork sausage

1/4 cup diced onion

1/2 cups soft bread crumbs

4 Tablespoons freshly grated Parmesan cheese

salt and pepper to taste

Directions

Preheat oven to 350 degrees F (175 degrees C).

Bring one inch of water to a boil in a saucepan over medium-high heat. Add squash, cover, and cook for 10 minutes, or until a fork can pierce the stem with little resistance. Drain, and slice off the top stem of the squash. Use a melon baller to carefully scoop out the centers of the squash. Reserve all of the bits of squash.

Place bacon or sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Remove meat to paper towels, and set aside. Sauté onion in bacon drippings. Chop the reserved squash pieces, and sauté them with the onion for one minute.

Remove the skillet from heat, and stir in the breadcrumbs. Crumble the sausage orbacon, and stir into the stuffing along with the Parmesan cheese. Season to taste with salt and pepper. Stuff each squash to overflowing with the mixture, and place them in a baking dish. Cover the dish loosely with aluminum foil.

Bake for 15 minutes in the preheated oven, or until squash are heated through.

A few ways to use & make Patty Pan squash

A Patty Pan squash is sweet like a sweet potato with white meat so it can be served in a number of ways. It is high in Beta Carotene which is the anti-cancer oxidant so it is healthy for you as well as tastes great. It can be added in casseroles, or stir fried with other vegetables.

  One way is to slice the Patty Pan in half scallop to scallop, remove seeds from both halves, fill with butter and brown sugar wrap in tin foil and bake or grill until tender then serve.

 Another great way to have patty pan squash peel and then quarter into small pieces and serve raw on salads it adds a new crisp and sweet texture to your salads.

 You can also peel, slice and quarter the squash and boil it just like potatoes when soft mash it, salt & pepper to taste and serve as a side dish. No matter how you serve Patty Pan it is delicious.
